In order to change the Plex video quality settings on the Microsoft Xbox Console, simply launch the PLEX app and find the settings menu at the bottom of the library list in the home screen in Plex.
Settings > Video Quality >
Head down to the Video Quality section.
This is what your final settings “should” look like…
Local Quality > Original
Allow Direct Play > Check'd
Allow Direct Stream > Check'd
